Bell’s Oberon Brat Bath
We've tried all kinds of beer, but using something with a little extra flavor – like a Bell's Oberon – provides that little extra you're looking for. So when you want to give those brats just that extra something, try this recipe! Quick Recipe: Set temp to 350°, cook Brats in beer bath with sautéed peppers & onions for 30-45 mins, turn temp 450°, remove from bath and place on grill for 7-10 mins, place brats in bun with peppers & onions, ENJOY!

Equipment
- Large Cast Iron Pan
- Traeger Apple Wood Pellets
Ingredients
- 1/4 Onion
- 1 Whole Bell Pepper (or equal parts multiple colors)
- 1 TBSP Olive Oil
- 1 TBSP Rock's Anytime Spice Blend (substitute salt & pepper)
- 1 Package Bratwursts
- 12 Oz Beer (Bell's Oberon is our choice)
- 12 Oz Water
- 1 Package Buns

Instructions
Oberon Beer Bath
- Begin by cutting the Onion & Bell Peppers into slices (thicker is better as they will shrink when sautéing).
- Before you begin to sauté the veggies, turn on your Traeger Timberline 1300 and set it to 350° F, allowing it to come to temp while you prep the Oberon Beer Bath.
- Next place your olive oil in the cast iron pan along with your cut onion and bell pepper. Season with Rock's Anytime Seasoning, and sauté for about 7-10 minutes until the onions start to become translucent. DO NOT over sauté or your veggies as they will finish cooking in the beer bath.
- After you have sautéd the veggies, pour the beer and water into your large cast iron pan.
- NOTE: Depending on the size of your pan and how many brats and veggies you have, feel free to adjust the beer and water amounts, keeping it roughly equal parts.
- Lastly, place your Bratwursts into your cast iron and place on the smoker. Allow the Bratwursts to cook in the beer bath for 30-45 minutes.
- NOTE: Again, depending on the size of your pan, if the brats are not fully submerged you may choose to flip them in the beer bath about half way through.
Grilling
- After the Bratwursts have cooked in the Oberon Beer Bath, remove them from the pan and place directly on the grill grate, but leave the veggies in the cast iron pan as is.
- Crank up the temp to 450° F and grill the Bratwursts 7-10 minutes, flipping half way through, just to tighten them up and create some grill marks.
- TIP: You may elect to poke a small hole in each side of the brat to allow some juice out. This will keep the brat from "shriveling" after you remove it from the smoker.
