Bacon Brussels Sprouts

This quick side dish is an easy but yummy way to add some greens to any meal or gathering.
Quick Recipe: Set temp to 375°, smoke Brussels Sprouts with olive oil & seasoning for 10 minutes, add chicken stock, bacon, balsamic vinegar, onions, smoke for another 15 minutes or until tender.

  • As you get ready to prep the Brussels sprouts, get your Traeger Timberline 1300 up to temp – setting the temp to 375°.

  • Place the bacon directly on the Traeger, and smoked at 375° for about 15 minutes.
  • With your bacon cooking on the Traeger, begin by cutting the end off each Brussels sprout, then cut each in half.

  • With all Brussels sprouts cut, place them into a bowl (or just the 8×5 aluminum pan) and drizzle the olive oil, a little at a time while tossing to spread as evenly as possible across all of the Brussels sprouts.
  • While drizzling the olive oil, also apply some Rock's Anytime Seasoning, as well as some Rock's Citrus Seasoning Blend while tossing to incorporate all the ingredients.

  • When your Traeger Timberline is up to temp, place your Brussels sprouts into the 8×5 aluminum pan and place on your Traeger Timberline 1300, smoking for approximately 10 minutes.

  • After your bacon has cooled, chop up the bacon. Also chop up your onion to the desired size. When the Brussels sprouts have cooked for about 10 minutes, place the chopped onions, chicken stock, Balsamic vinegar & chopped bacon into the pan and stir together.
  • Allow your Brussels sprouts (with all ingredients added) to smoke for another 15-20 minutes. Cook them to the desired texture – some like them a little crunchy, some like them a little softer – to satisfy your guests!

  • As an added option, throw on some Parmesan Cheese when serving.
