Bacon Brussels Sprouts

Brussel sprouts are a delightful side dish that pair perfectly with almost any main course. Whether you're looking for a healthy side dish or just want to add some greens to your plate, try these bacon brussel sprouts and create a fantastic choice for our guests that is sure to satisfy.
Quick Recipe: Set temp to 375°, smoke Brussels Sprouts with olive oil & seasoning for 10 minutes, add chicken stock, bacon, balsamic vinegar, onions, smoke for another 15 minutes or until tender.

  • As you get ready to prep the Brussels sprouts, get your Traeger Timberline 1300 up to temp – setting the temp to 375°.

  • Place the bacon directly on the Traeger, and smoked at 375° for about 15 minutes.

  • With your bacon cooking on the Traeger, begin by cutting the end off each Brussels sprout, then cut each in half.

  • With all Brussels sprouts cut, place them into a bowl (or just the 8×5 aluminum pan) and drizzle the olive oil, a little at a time while tossing to spread as evenly as possible across all of the Brussels sprouts.
    2-3 TBSP Olive Oil
  • While drizzling the olive oil, also apply some Rock's Anytime Seasoning, as well as some Rock's Citrus Seasoning Blend while tossing to incorporate all the ingredients.

  • When your Traeger Timberline is up to temp, place your Brussels sprouts into the 8×5 aluminum pan and place on your Traeger Timberline 1300, smoking for approximately 10 minutes.

  • After your bacon has cooled, chop up the bacon. Also chop up your onion to the desired size. When the Brussels sprouts have cooked for about 10 minutes, place the chopped onions, chicken stock, Balsamic vinegar & chopped bacon into the pan and stir together.
    1/4 Whole Sweet Onion, 2/3 Cup Chicken Stock, 3 TBSP Balsamic Vinegar
  • Allow your Brussels sprouts (with all ingredients added) to smoke for another 15-20 minutes. Cook them to the desired texture – some like them a little crunchy, some like them a little softer – to satisfy your guests!

  • As an added option, throw on some Parmesan Cheese when serving.

As a child, I despised brussel sprouts. They were the bane of my existence, the one vegetable that I just couldn’t stomach. It didn’t matter how they were prepared – boiled, roasted, sautéed – I simply couldn’t bring myself to eat them.
But as I grew older, something changed. Maybe it was my taste buds finally maturing, or maybe it was just a newfound appreciation for vegetables in general. Whatever the reason, I found myself slowly but surely starting to enjoy brussel sprouts.
It started on a smoker, tossing with olive oil, seasoning to our delight and roasting until they were crispy and caramelized. Then, we added some bacon and onions for a heartier, more savory flavor. And now, I can confidently say that I love brussel sprouts.
There’s something about their slightly bitter, nutty flavor that just appeals to me now. Maybe it’s the fact that they’re packed with vitamins and fiber, or maybe it’s just because they taste so darn good. Either way, I’m glad that I gave brussel sprouts another chance.
So if you’re like me and have been avoiding this little green vegetable for years, I encourage you to give them a try. Who knows, you might just discover a new favorite dish.
