How long to smoke ribs at 275 you ask? Well this is the recipe for you. Follow our tried and true recipe and you and your guests will be eating in about 3-4 hours!
Quick Recipe: Set temp to 275°, prep with 2 to 1 ratio of Rock's Coffee Rub & Rock's Hey Boo!, smoke for 2 hrs uncovered, wrap and cook for 1 hr, unwrap and set Rock's Irish Whiskey BBQ Sauce for 10 mins, rest then ENJOY!

  • About 15-30 minutes before you are ready to get started, take out your slab of baby back ribs and prep your smoker to 275°.
  • Begin by removing the membrane from the under side of the ribs (Pro tip: Use a paper towel to help with your grip, and assist in ripping the membrane off with one pull).
    1 Slab Baby Back Ribs
  • OPTIONAL: Add binder like mustard prior to applying rubs/spices.
  • Apply a 2 to 1 ratio of Rock's Coffee Rub Spice Blend and Rock's Hey Boo! Honey Spice Blend.
    2 Tbsp Rock's Coffee Rub Spice Blend, 1 Tbsp Rock's Hey Boo! Honey Spice Blend
  • With the ribs flipped to meat side up, again apply a 2 to 1 ratio of Rock's Coffee Rub Spice Blend and Rock's Hey Boo! Honey Spice Blend.

  • NOTE: Don't forget to also apply rub to the ends and sides.
  • When your smoker is up to temp (275°) place your ribs on, meat side up. Let them smoke for approx. 2 hours.
  • After smoking for two hours, pull ribs off the smoker and wrap tightly with aluminum foil. A great technique is to lay out a long sheet of foil, then "roll" the slab of ribs over multiple times and then close up one end. On the open end, take a small amount of water and pour into your foil. Close the open end.
  • Then place your ribs back on the smoker, at 275°, and smoke for approx. 1 hour.
  • After the two hours smoking unwrapped, and the 1 hour smoking wrapped you should be able to tell if the ribs are done because the bones will now be exposed and pulled away slightly from the edges.
  • If the bones are pulled away, remove them from the foil and place on the smoker. Then apply a liberal amount of Rock's Irish Whiskey BBQ sauce to the ribs and mop/brush on.

  • Allow the ribs to smoke for another 10-15 minutes on 275° to set the sauce.
  • After the sauce is set, allow your ribs to rest for 5-10 minutes before cutting and serving.
